Cava Masia S.XV Vintage: 1993 Bottling Date: April 1994 Varieties: The native grapes of the Penedés region: Parellada, Xarel.lo, and Macabeo as well as the French Chardonnay, exclusively from our own vineyards (210 Ha). The harvest is done by hand. Denomination of Origin: Cava (from the Catalonian Penedés region) Basic wine: Only from flower must avoiding any pressing. The harvest was done at the best proportion of sugar / acidity and ripe point of the grapes, making unnecessary any correction at the cellar. 1st Fermentation: At 16 to 18oC, in stainless-steel vats. 2nd Fermentation: 4 years minimum in bottle, in underground cellars, at a natural and constant temperature of 15oC. Shaking (or stirring): Manually, on a shaking-table (during approx 21-28 days) Type of Bottle: Champagne-type bottle, 75 cl. capacity. Reducing Sugars: 1'2 gr./litre. Total Acidity in Tartaric States: 6'6 gr./litre. Pressure inside of Bottle: 4'8 Atmospheres. Degree of Alcohol: 11'5 vol% Serving Temperature: 5oC to 8oC Organoleptic Characteristics: It is a millesimee. Bottles are numbered as this was a limited production batch elaborated from vines located in a particular sector of the estate, at an altitude of 500 metres, whose micro-climate is such that it gives them special characteristics. So it is a "crú". Colour is light straw-yellow, with an abundance of bubbles in fine strings. It has a clean and delicately fine aroma of long aging. With delicate floral overtones, surprising for its long aging. Its taste is smooth and balanced with a widespread and elegant back-of-the nose effect. Fine end-mouth and complex taste of countryside flowers and fruits. Exceptional blending. This product is only bottled when harvests are exceptional, not every year. The reserve is usually around 22.000 bottles. Can be taken as an aperitif or at any other moment since its elegance and personality so permit. Also goes well with liver-pastes, souffles and mild dishes. Awards:
Marketing: As an exclusive product is marketed to the best Restaurants, delikatessens and fine wine shops. Exports are mainly concentrated to E.E.C. Countries and Japan. |
